Yechun teahouse, a time-honored Huaiyang cuisine brand in Yangzhou, has opened a restaurant in Frankfurt, Germany, marking a significant step in its overseas expansion.

The restaurant is located on the ground floor of Intercity Hotel, part of H World Group, in the core commercial area of Frankfurt's main railway station, a major European transportation hub. Open from 7 am to 10 pm, it serves hotel guests, locals and visitors with Yangzhou morning tea and full meals.
To preserve authentic Huaiyang flavors while addressing challenges such as differences in German flour protein content and local tofu-making processes, Yechun's culinary masters have shown great adaptability.
By adjusting flour ratios, they have solved the fermentation challenges of pastries and used premium German pork to enhance the texture of lion's head meatballs and soup dumplings. For the Wensi tofu soup, they have used a special alternative — tofu made with glucono-delta-lactone as a coagulant, which is tenderer and silkier.
On opening day, the restaurant drew many Yangzhou expats living in Germany, who said the food tasted just like home.
Yechun's outlet in Frankfurt has set a model for Chinese restaurants expanding into Europe. It is poised to continue sharing Yangzhou's culture through its cuisine, aiming to win global recognition for Huaiyang flavors, according to a representative from Yangtze River Cultural and Tourism Investment & Development Group.
