As the chilly winter arrives, Yangzhou's hot pot scenes never cool down.

Ziqi Hot Pot is regarded as one of the representative local hot pot brands and famous for its signature duck feet soup base. The restaurant uses premium ingredients. Its service is so attentive that staff will even peel shrimp for diners. All this comes at a great value, with an average cost of just 80 yuan ($11.32) per person.

Shidingxiang Hot Pot offers chrysanthemum hot pots. These special treats are inspired by poems of the chrysanthemum-loving Eastern Jin Dynasty (317-420) poet Tao Yuanming and the imperial feasts of the Qing Dyansty (1611-1944). With the addition of fresh chrysanthemum petals, the clear and mellow broth releases a burst of fragrance.

In Yangzhou, savoring herbal chicken hot pot is a winter ritual to nourish the body. The store located on No 13-5 Niansiqiao Road in Hanjiang district is especially highly recommended. Its soup base, simmered for hours with traditional Chinese medicinal materials and a free-range hen, is golden and glossy. The chicken itself becomes so tender that the meat effortlessly falls off the bone.

Beyond these local specialties, Yangzhou's hot pot landscape is enriched by a diversity of regional styles, such as the sour-spicy pots of Yunnan and Guizhou, the intensely spicy pots of Sichuan and Chongqing, and the nourishing pots of Guangdong.
