Get a glimpse of history of Yangzhou fried rice

Yangzhou was recently designated as a UNESCO Creative City of Gastronomy, and Yangzhou fried rice is perhaps the city's most well-known dish. The following are some interesting facts about the popular Chinese-style dish served in restaurants throughout the world.

It is believed that fried rice was invented by Yang Su during the Sui dynasty (589–618) in Yangzhou in eastern Jiangsu province.

The recipe was later modified by Yi Bingshou, who once served the regional magistrate of Yangzhou in the Qing Dynasty. Yi's modified version featured the addition of shrimps and char siu.

After retirement, Yi returned to his hometown – Ninghua in Fujian province – which is the original homeland of the vast majority of overseas Chinese today. The Fujian diaspora later spread the dish across the world.
